Africa, the second largest landmass on Mother Earth has an abundance of ethnic and cultural groups. Food from the motherland of Africa is diverse and filled with delightful flavors. Unique recipes are rooted in traditions passed on from one generation to the next. And in turn, food was used for life lessons.

Daily life on the island of Madagascar is about food. It is the centre of conversation activity and rhythm.

Preparing food is a lengthy communal affair. Food in Madagascar is about sharing, and the Malagasy love to share. Cuisine from Madagascar is delicious but uncomplicated. Basic ingredients and equipment.  There is never  ‘nothing to eat ‘ as a meal can easily be rustled up from a few ingredients.

Nothing gets wasted. Food is valuable and appreciated and takes up seventy percent of household incomes and meals are prepared lovingly. Food is still in natural forms and cooked over open-wood charcoal.

Karibu  (Welcome) to  Malagasy style meals

Madagascar cuisine has an interesting blend of influences from the French, African,Indian and Arabic cultures. The staple is gigantic servings of rice. Typical flavors are generous ginger,garlic,onion vanilla,curry powder,lime juice and local vegetables.

An acquired Malagasy taste, it is a type of tea made with burnt rice. The bottom of rice pots is mixed in water to create an interesting refreshment.

 

 

2. Voanjobory Sy Henakisoa

This traditional Madagascar dish was part of a feast during the Merina Royal festival. It is eaten at homes and restaurants all over the country.

 

 

The dish is a serving of Bambara groundnuts with chopped pork served with rice.

This dessert is made from honey, banana, and peanuts and then wrapped in banana leaves and can be found anywhere as street food.

A common dish serves to complement main dishes. It is a mixture of cabbage, green beans, carrots and onions in a mild vinaigrette. Lasary refers to pickled lemon and mangoes in cities

Potato leaves are served in a stew with dried shrimp with tomato sauce and beef in a heap of rice

This dish is a combination of crab, lobster and a stir-fry of pork with ginger, lime juice and fresh greens served the Malagasy way with a heap of rice.

 

Akoho sy voanio

A popular Malagasy meal found in most restaurants. It includes tomatoes, coconut milk, onion, chicken, ginger, garlic and some ground pepper.

Tantalizing Tanzania Tastes

Many yearn to travel to Tanzania.There is way too much to do, climbing Kilimanjaro, kite surfing, quad exploring the vast national parks for wildlife, and landscape wonders.

And then there are the beaches. With all the action be sure that a healthy appetite will build up. A fine Tanzania cuisine and palate treat to savour on the ongoing adventure are sure to pass your way.

Here are a few ideas to splash into simmering into the adventure ahead when venturing to explore the heart of Motherland Africa in Tanzania or to re-experience treats after an escapade venture in Tanzania.

Let us start with a popular breakfast dish, Vitumbua. With a warm cup of ‘Chai’, you are sure to set off into an interesting day ahead with a start of taste bud sensations.


Vitumbua

1 cup – Rice Flour

4 tablespoons of plain flour

1 cup  Coconut milk

Teaspoon yeast

1 quarter cup sugar

1 teaspoon ground cardamom seeds

oil

Mix the rice flour, the plain flour, coconut milk and cardamom adding water slowly to thicken the paste. Cover upkeep in a warm area for about an hour until bubbles form on the top and the mixture has doubled in size.

Stir the batter and place in a Vitumbua pan

Give the batter a stirring placing a drop of oil in each section. Pour in a teaspoon of batter and flip until it browns on both sides.


Ndizi Kaanga (Fried Plantains)

8 Plantains

Lemon Juice

Butter

Nutmeg

Place the butter in a frying pan until melted. Cut the plantains into quarters. Dip in lemon juice and place on the heated pan until they are browned lightly.Sprinkle with some nutmeg

Wali wa Nazi (Rice cooked in Coconut Milk)

2 cups rice

1 and a half cup of coconut milk and 2 and a half cup water

1 teaspoon of salt

Add the coconut milk and water mixture into a saucepan with salt until it reaches boiling point, Add in the rice and lower the heat , cover and simmer for about half an hour. Serve alone or as an accompaniment

Chapatti

2 cups of flour

Warm water

Salt

1  onion chopped finely

Mix the flour salt and onion with hot water to make an elastic smooth dough and fold into a ball, Roll on a surface with flour and cook over medium heat in a frying pan and flip over once browned, The chapatti texture will be supple and soft once completed

There are amazing subterranean caverns open to the public for an unforgettable adventure through tunnels and chambers. One highlight is ‘Cleopatras Needle’, a formation that is 9m high and over 150000 years old.

The name of the park. ‘Golden’ Gate  Highlands National Park is linked to the golden glittering sandstone cliffs. Located in the Northern Freee State 120km from Bloemfontein, the Maluti  Mountains nestle the park, home to various wildlife including wildebeest and zebra as well as rare birds like the bearded vulture and bald ibis. There is an abundance of activity from horseriding to nature trails and game viewing.

The combined protected area is thirty-eight thousand square kilometres.  In South Africa, part of nine thousand six hundred square kilometres covers the Southern part of the Kalahari desert which is uninhabited.  It offers great opportunities for game viewing of endangered and rare species.

Malawi -The Warm Heart of Africa

Malawi's vast variety, overwhelming friendliness  great lake, wildlife, landscape and culture makes it an ideal getaway for families.

The initial western inception was when David Livingstone entered the shores in 1859. A British wiped out  slave trade in 1891.

For such a small country it has an unrivalled combination of Lake, Landscape and Wildlife. From rugged highlands to lowland plains, Malawi has an incredible variety of stunning landscapes.

The unique rolling hills of orchid-clad Nyika; the cool forested plateau of Zomba; the 10000 ft climbers’ paradise of Mulanje Massif; the broad and fertile Shire Valley.

Malawi means the “glitter of the sun rising across the lake”.  And this vast inland sea is what we think about when we think about Malawi.

Lake Malawi is the third-largest lake in Africa, the 10th largest in the world and covers 1/5th of Malawi. It’s sometimes called the Calendar Lake because it’s 365 miles long and 52 miles wide.

Now the town is the site of a new museum focused on both its cultural history and the recent archaeological finds of dinosaur and hominid bones.

Off the eastern shore of the Lake is Likoma Island: a small piece of Malawi in Mozambican waters. Likoma’s claim to fame is its cathedral (the size of Winchester’s) started in 1903. This vast building is a small piece of England in Africa, including stained glass and carved soapstone.

Visit the world’s first freshwater national park. Lake Malawi National Park, close to Monkey Bay, lies towards the southern extremity of the lake. The park includes a land area around the cape and bay as well as the Lake and islands up to 100 metres offshore. It’s also a world heritage site.

Snorkelling and scuba-diving are increasingly popular here because of the attraction of seeing the brilliantly coloured fish, the mbuna.

Lake Malawi contains more fish than any other lake in the world. Some of the rarest tropical fish in the world are unique to this vast lake. it has about 1000 species of fish. It’s is a true kaleidoscopic aquarium.

The countless thousands of freshwater fish, the mbuna, are more abundant and varied than anywhere else in the world and will feed directly from the hand.

Marine animals include two species of otter and occasional crocodiles.

Away from the lake, the park has baboons, klipspringer, bushbuck and vervet monkeys, antelope and hyrax, and, of course, there is a great variety of birdlife including fish eagles, kingfishers, cormorants and hamerkops. In the North the

In the North the lake is quite extraordinarily deep: 700m, plunging well below sea level. This reflects the enormity of the natural faulting of the Great Rift Valley which is the origin of the Lake itself.

Try out the range of watersports available along the length of Lake Malawi. Swimming, waterskiing, sailing and kayaking are all available along the extraordinarily clear lakeshore.

Because of its rich harvest of fish, the Lake plays an important part in the country’s economy. Fishing villages are scattered along the length of the lakeshore and you’re welcome to visit the traditional industry. Go fishing on the southern lakeshore north of Mangochi and at Senga Bay. There are opportunities to fish for yellow fish, lake salmon and lake tiger. Trout angling is easily arranged at Nyika Plateau or  Chelinda as well as Zomba Plateau.

It is recorded that there are 1100 bird species in Tanzania.This is the the third-highest on the continent of Africa.

A well-planned bird watching itinerary for two weeks can result in viewing approximately 300 species.

Game reserves like Selous and Serengeti are rewarding for bird watching and are an ideal introduction to the widespread species.

Experienced birders usually explore the Eastern Arc Mountains. They are the biggest attraction in Tanzania as they harbor 35 endemics that are found exclusively in Tanzania

Birding in Tanzania is good all year round, the prime season is usually September to April when the resident population has migrants that spend the northern hemisphere winter in Africa.

Traditional music of Madagascar….Where do we begin to define it? We have the Austronesian influence on one side, and then Arab, African and European populations ingestion.

The variety makes it impossible to specify origin of  unique Madagascar tunes   that rhythmically echo on on for a millennium.

The internet has given the pathway for a refreshing and reawakening of Madagascar music.The sacred and secular music alleys may be the sounds of a ritual or even used for animating teenage games in villages.

The Kingdom era has evolved into current day modern applications of melody replacements and trending pop culture in the cities. The rhythm of Madagascar language is innovative tunes in versions from every direction in the Madagascar landscape.

Local artists in remote villages retain traditional rustic sounds. The music reflects the history of communities and is not strive for stardom. The cities have interposed rhythms on traditional genres and incorporated spectacular innovation in electronic sound.

The complex mosaic of Madagascar is made up of a 22million population with 18 ethnicities. There are six provinces.The culture and common language is spoken throughout the land and the term of ethnicity has been abandoned making way for ‘human group’ gathering in rhythmic unison.

The Sakalava dominated the West in music influence. The Merina in the central highlands and Betsimisaraka in the east mark rhythmic variations. Áfindrafindrao is an ancestral tune that was danced in quadrille adopted in the 19th century by Merina Kins and later influenced every part of the big island.

The strongest group in the South, the Antandroy, preserve musical tradition,  the contemporary musicians from this group are the most recognized groups internationally.

In the north, a special contribution was made to Madagascar traditional music by the Antahkarana.  The most festive part of Madagascar favoured by vegetation and the climate.

 

Madagascar musical footprints include the Tanala., Bestileo, Bezanozano, Bara, Masikoro, Tsimihety,  Antesaka, Sihanaka, Antemoro, Vezo, and a stream of others.

Top 10 Mozambique Mouthwatering Munches

Mozambique, the tropical paradise of Southern Africa has gorgeous beaches, beautiful islands and turquoise sea with a palm lined coastline.

Peri Peri chicken is common in Mozambique and other parts of Southern Africa with Portuguese influences. It consists of marinated chicken in lemon juice and a generous dose of peri peri sauce and served with French fries.

Smashing Food Flavors of Zimbabwe

Landlocked Zimbabwe, (“House of Stone”) in the southern central part of Africa, the name from 800-year-old remains of stone left by Shona people. 

Shona people make up 77 percent of the population of Zimbabwe (formerly Rhodesia) and the remaining 18 percent are Ndebele is between the Zambezi and Limpopo.

Located between the Zambezi and Limpopo River, Zimbabwe is mainly rolling plateau. The high plateau ends in the Inyanga mountains and the low plateau is grassy plains.

Gold was discovered in1300  with shared powers by the Shona and Ndebele until European invasion and British spices and food infiltrated Zimbabwe cuisine with tea, bread and sugar.

The Limpopo and Zambezi river borders of Zimbabwe provide nutrients and moisture for crops like pumpkins, yams, corn, squash and peanuts and papaya in the Summer and Autumn seasons.

Preserving food for winter months various produce and meats are dried. ‘Kapenta’is a common dried fish snack, as well as sun, dried flavoured meat.

Zimbabwe cuisine

Cornmeal is the main staple. Common Zimbabwean dishes include Sadza, stiff maize meal  eaten  with various  dip or side options such as gravy, meat, sour milk or vegetable

Bota:  Peanut butter flavoured porridge . Other alternatives are butter or jam flavours. This is a usual breakfast menu.

Dovi : The peanut crops brought in by Portuguese traders in the 16th century became a key ingredient in most dishes. Dovi is a peanut butter stew eaten with vegetables or meat.

Mapopo candy: Papaya is cooked and sprinkled with sugar  and made into a sweet treat.

Mapopo candy (Papaya)

Pumpkin

1 Papaya

2 cups Sugar

Grated Lemon Peel

Fresh or dried mint

Wash and papaya . Slice into little strips. Place over low heat with grated lemon and sugar over low heat until all the sugar dissolves. Reheat the mixture at medium heat until crystallization.

Remove from heat and shape into stick or ball shapes

Butternut Squash Roasted

1 Butternut Squash

3 Tablespoons of butter

Cinnamon

Preheat oven   425°F.Peel and cut the squash removing seeds. Place into foil and spread butter. Seal foil tightly around. Roast for about 25 minutes until the squash lightly browns. Sprinkle cinnamon

4  cups of water

Two and a half cups of cornmeal

Method

 

Boil  3 cups of water.Mix one cup of water with 1 and a half cup of cornmeal. Reduce heat and add the cornmeal mixture, stirring continuously. Cook for five minutes

Add the remaining cornmeal gradually. When the mixture has thickened place  in the serving dish

2 onions, chopped finely

Two tablespoons of butter

Two crushed garlic cloves

1 teaspoon salt

Half teaspoon pepper

Half teaspoon cayenne pepper

2  chopped green peppers

Chicken pieces

4 tomatoes

Fresh spinach

Braise the onions in butter. Add salt garlic and seasoning. Stir and add chicken and green peppers. Add tomatoes once the chicken is cooked . Add water and simmer and add in  half of the peanut butter.

In a separate pot cook spinach, Add peanut butter into the spinach and serve with the stew.
