Unique recipes are rooted in traditions passed on from one generation to the next. And in turn, food was used for life lessons.

Preparing food is a lengthy communal affair. Food in Madagascar is about sharing, and the Malagasy love to share. Cuisine from Madagascar is delicious but uncomplicated. Basic ingredients and equipment. There is never ‘nothing to eat ‘ as a meal can easily be rustled up from a few ingredients.
Nothing gets wasted. Food is valuable and appreciated and takes up seventy percent of household incomes and meals are prepared lovingly. Food is still in natural forms and cooked over open-wood charcoal.
Karibu (Welcome) to Malagasy style meals Madagascar cuisine has an interesting blend of influences from the French, African,Indian and Arabic cultures. The staple is gigantic servings of rice. Typical flavors are generous ginger,garlic,onion vanilla,curry powder,lime juice and local vegetables.
An acquired Malagasy taste, it is a type of tea made with burnt rice. The bottom of rice pots is mixed in water to create an interesting refreshment.
This traditional Madagascar dish was part of a feast during the Merina Royal festival. It is eaten at homes and restaurants all over the country.
The dish is a serving of Bambara groundnuts with chopped pork served with rice.
This dessert is made from honey, banana, and peanuts and then wrapped in banana leaves and can be found anywhere as street food.

Here are a few ideas to splash into simmering into the adventure ahead when venturing to explore the heart of Motherland Africa in Tanzania or to re-experience treats after an escapade venture in Tanzania.
Let us start with a popular breakfast dish, Vitumbua. With a warm cup of ‘Chai’, you are sure to set off into an interesting day ahead with a start of taste bud sensations.
1 cup – Rice Flour
4 tablespoons of plain flour
1 cup Coconut milk
1 quarter cup sugar
1 teaspoon ground cardamom seeds
Mix the rice flour, the plain flour, coconut milk and cardamom adding water slowly to thicken the paste. Cover upkeep in a warm area for about an hour until bubbles form on the top and the mixture has doubled in size.
Stir the batter and place in a Vitumbua pan
Give the batter a stirring placing a drop of oil in each section. Pour in a teaspoon of batter and flip until it browns on both sides.
Place the butter in a frying pan until melted. Cut the plantains into quarters. Dip in lemon juice and place on the heated pan until they are browned lightly.Sprinkle with some nutmeg
2 cups rice
1 and a half cup of coconut milk and 2 and a half cup water
1 teaspoon of salt
Add the coconut milk and water mixture into a saucepan with salt until it reaches boiling point, Add in the rice and lower the heat , cover and simmer for about half an hour. Serve alone or as an accompaniment

1 onion chopped finely
Mix the flour salt and onion with hot water to make an elastic smooth dough and fold into a ball, Roll on a surface with flour and cook over medium heat in a frying pan and flip over once browned, The chapatti texture will be supple and soft once completed

Igniting “Khanyisa”, the light of Africa into Tanzania in 2015, Tu Nokwe hailed sparkling testimony that light of Africa cannot die out.
The ‘Light of Africa’ , Tu Nokwe, blessed the heart of motherland Africa, Tanzania on various special occasions in 2015.
A blissful melody of liberating tunes left heart beats echoing with rhythm and souls pulsating with sounds of Africa at the renowned Bagamoyo Festival.
Many fundraising projects were initiated for further development. One of them was AMAP (“The Africa Modern Arts Project”). Based in the historical town of Bagamoyo, AMAP serves as a community-based learning centre with a mission to harbour and guide local talent, helping artists to polish skill and flourish as professionals.
Joyful vocals brightening the gloom with a soulful blend of jazz and funk sprouted with a new age twist at performances and workshops at Dhow Countries Music Academy in Zanzibar.
According to DCMA director Mitchel Strumpf, “Ms. Nokwe visited Zanzibar during the time of the Zanzibar Film Festival and participated in activities of the Festival. She conducted a workshop for the Certificate and Diploma students at the Dhow Countries Music Academy and performed as a special guest during a concert by the DCMA's Taarab-Kidumbak Ensemble. That visit was a trail-blazer for future visits, an opening of the door to see the interests of people for thinking about music and music-making from the standpoint of music being healthy for broadening the soul of a person, including the sharing of musical sounds like sharing food at a dinner. “Her voice is magnificent and the music projects she and her family have been doing in South Africa hopefully will associate with the activities of DCMA and other schools of music traditions from African cultures in other parts of Africa to form an Association of Schools of Traditional African Music. This idea was discussed in detail while she was at DCMA. While in Zanzibar previously, Ms Nokwe also gave a master class in singing and African song styles.
The design of her programme was to boost self-esteem and inspiration with creative interaction, music and storytelling with self-management and life skills workshops, jam sessions and talent showcases. An opportunity for Africa to share all they excel in.

Guest of honour Tu Nokwe will be accompanied by none other than the legendary Dorothy Masuka with a group of five children.
Dorothy rose to fame in the revolutionary era of the 1950’s and aspires to share her wisdom with the upcoming generation to explore the magnificent continent they are from.
Her voice evoked global applause. Her songs catapulted many South African artists to fame, Her music spoke of the times. She’s an international icon, role model, artist, mother, grandmother, family caregiver, composer, singer, musician, entertainer.
The history of the contribution of black women musicians would be incomplete without the story of Dorothy Masuka whose musical compositions still inspire young and old musicians today.
The Juu Afrikan Arts and Culture festival in Morogoro has launched.
The main festival themes encompass a revival, a preservation, and revamping authentic legendary tribal African root tunes and music. The fusion of new compositions that integrate contemporary creations with an authentic rhyme influx and beats, celebrating true African heritage with soul music. The initial festival featured sparked of with Ruguru culture. The festival launched into branches of tribe celebrations, paying homage to heritage with cultural performances encompassing unique tribal stories, songs, plays, dances films and narratives.

Traditional music of Madagascar….Where do we begin to define it? We have the Austronesian influence on one side, and then Arab, African and European populations ingestion. The variety makes it impossible to specify origin of unique Madagascar tunes that rhythmically echo on on for a millennium.
The internet has given the pathway for a refreshing and reawakening of Madagascar music.The sacred and secular music alleys may be the sounds of a ritual or even used for animating teenage games in villages.
The Kingdom era has evolved into current day modern applications of melody replacements and trending pop culture in the cities. The rhythm of Madagascar language is innovative tunes in versions from every direction in the Madagascar landscape.
Local artists in remote villages retain traditional rustic sounds. The music reflects the history of communities and is not strive for stardom. The cities have interposed rhythms on traditional genres and incorporated spectacular innovation in electronic sound.
The complex mosaic of Madagascar is made up of a 22million population with 18 ethnicities. There are six provinces.The culture and common language is spoken throughout the land and the term of ethnicity has been abandoned making way for ‘human group’ gathering in rhythmic unison.
The Sakalava dominated the West in music influence. The Merina in the central highlands and Betsimisaraka in the east mark rhythmic variations. The strongest group in the South, the Antandroy, preserve musical tradition, the contemporary musicians from this group are the most recognized groups internationally.

Traditional music instruments are the Valiha (zither pipe) and marovany (box zither). These are the most played. It is a legacy of the Mlayo Polynesian heritage.

A land of tropical fruit, abundant seafood and fish and a Portuguese taste influence is a heaven for foodies.
Piri Piri (peri-peri) is part and parcel of all Mozambican cuisine. It is used in every marinade and also a common option for french fries or rice.
Not common on tourist restaurant menus, Matapa is a traditional dish. You will be more than likely to come across if visiting locals. It is made with stewed cassava leaves, ground peanuts and garlic and coconut milk. It is eaten either on its own or accompanied by sumptuous prawns and rice.
Juicy fresh, flavourful prawns are the highlight of Mozambique delights. They are served fried, grilled in peri peri or tossed with garlic with rice of French fries.
Coconut rice is common in Mozambique, fluff rice made in coconut milk. Perfect to compliment Mozambique spicy and hot delights.
Paõ are Portuguese bread rolls baked in villages in ovens that are wood fired
Mozambique flavours and tastes of curry are unlike Thai or Indian food but distinctly unique in a special taste of local spices. It is served with chicken or prawns.
6. Peri peri chicken
Peri Peri chicken is common in Mozambique and other parts of Southern Africa with Portuguese influences. It consists of marinated chicken in lemon juice and a generous dose of peri peri sauce and served with French fries.

A roadside Mozambique snack is prego rolls. Steak covered in fiery chilli vinegar and garlic sauce wrapped in paõ. Simply delicious
Once the largest cashew producers, cashews grow all over Mozambique. They are sold at cheap prices at every street corner and the beach. Plain and delightfully tasty peri peri flavours are tastebud sensational tinglers.

10. Tropical fruit
The humid warm Mozambique climate brings out simply delicious tropical fruit al over. Coconuts, papaya, avocados and sweet mangoes.
Landlocked Zimbabwe, (“House of Stone”) in the southern central part of Africa, the name from 800-year-old remains of stone left by Shona people.
Shona people make up 77 percent of the population of Zimbabwe (formerly Rhodesia) and the remaining 18 percent are Ndebele is between the Zambezi and Limpopo.

Gold was discovered in1300 with shared powers by the Shona and Ndebele until European invasion and British spices and food infiltrated Zimbabwe cuisine with tea, bread and sugar.
The Limpopo and Zambezi river borders of Zimbabwe provide nutrients and moisture for crops like pumpkins, yams, corn, squash and peanuts and papaya in the Summer and Autumn seasons.
Preserving food for winter months various produce and meats are dried. ‘Kapenta’is a common dried fish snack, as well as sun, dried flavoured meat.
Cornmeal is the main staple. Common Zimbabwean dishes include Sadza, stiff maize meal eaten with various dip or side options such as gravy, meat, sour milk or vegetable
Bota: Peanut butter flavoured porridge . Other alternatives are butter or jam flavours. This is a usual breakfast menu.
Dovi : The peanut crops brought in by Portuguese traders in the 16th century became a key ingredient in most dishes. Dovi is a peanut butter stew eaten with vegetables or meat.
Mapopo candy: Papaya is cooked and sprinkled with sugar and made into a sweet treat.
2 cups Sugar
Grated Lemon Peel
Fresh or dried mint
Wash and papaya . Slice into little strips. Place over low heat with grated lemon and sugar over low heat until all the sugar dissolves. Reheat the mixture at medium heat until crystallization.
Remove from heat and shape into stick or ball shapes
1 Butternut Squash
3 Tablespoons of butter
Preheat oven 425°F.Peel and cut the squash removing seeds. Place into foil and spread butter. Seal foil tightly around. Roast for about 25 minutes until the squash lightly browns. Sprinkle cinnamon
4 cups of water
Two and a half cups of cornmeal
Boil 3 cups of water.Mix one cup of water with 1 and a half cup of cornmeal. Reduce heat and add the cornmeal mixture, stirring continuously. Cook for five minutes
Add the remaining cornmeal gradually. When the mixture has thickened place in the serving dish
2 onions, chopped finely
Two tablespoons of butter
Two crushed garlic cloves
1 teaspoon salt
Half teaspoon pepper
Half teaspoon cayenne pepper
2 chopped green peppers
Braise the onions in butter. Add salt garlic and seasoning. Stir and add chicken and green peppers. Add tomatoes once the chicken is cooked . Add water and simmer and add in half of the peanut butter.
In a separate pot cook spinach, Add peanut butter into the spinach and serve with the stew.
